Hi Gang,
This isn't your average smoked pork shoulder served with bbq sauce, slaw and beans or a regular slow and low cooking method. We turned the pork into an authentic Puerto Rican smoked mojo marinated pork shoulder with beans, rice and plantains. With my method we had tender and moist pork in 4 hours with an internal temp of 208 F. If you have time check out my wife's blog, it has a lot of pictures!
