Hi Gang,

This isn't your average smoked pork shoulder served with bbq sauce, slaw and beans or a regular slow and low cooking method. We turned the pork into an authentic Puerto Rican smoked mojo marinated pork shoulder with beans, rice and plantains. With my method we had tender and moist pork in 4 hours with an internal temp of 208 F. If you have time check out my wife's blog, it has a lot of pictures!

I never really got a good feel for Mojo injected pork on a smoker, but roasted in the La Caja China is another story. I never gave it a thought to use the Mojo marinade as the foil wrap before. (never foiled it before) Definiteley see the advantage!

Cooking a whole pig in the LCC#2 for a contest next week and was looking for a Cuban or Puerto Rican dish to serve along side the puerco-this could be it!

Love Mojo pork! And I love that every culture has some form of smoked BBQ like this.
