Finally got around to making Wampus' Award Winning Peach & Bourbon Baked Beans. All I can say is WOW :shock: They were a huge hit with the fam.
Here's the onion, pepper, & bacon simmering, with the bourbon patiently waiting to work it's magic...

One post on Wampus' thread suggested adding pig candy. I thought that sounded good, so when I smoked the maple fattie for this recipe, I also did up some pig candy. Unfortunately, the pig candy never made it that far, it was gone before I even started this recipe :tsk: Forgive me, I am weak.
I had picked up a tri tip to go with the beans, but I did that on my Weber, 'cause I wanted a good reverse sear. I didn't want the beans to be lonely on the UDS, so I also threw on a rack of babybacks, a bologna chub, and a couple of fatties...

I rubbed the tri tip with Santa Maria seasoning & cooked indirect to IT of 115*. Then cranked up the Weber & threw it on direct for a few minutes for the sear. It was quite the show....

The result was med/med-rare in the center with a nice crust and tons of juice...

On the ribs, I used SM sweet Seduction. It was my first time trying this rub, and it too was a big hit (sorry, not the best pic)...

The bologna chub looked good, but it, and the fatties were going to have to be for another day. Too much food!

And just to make the nutrition Nazi happy, I served all this with a side salad with my copycat Olive Garden dressing (no pron..... it's a salad) :bored:.

Both my kids said this was the best beans they've ever had, the best tri tip they've ever had, and the best ribs they've ever had. Doesn't get any better than that! :clap2:

oh! if you have never had a 1/2" to 1" thick BBQ Bologna Sandwich you have not lived my friend...

Fresh thick sliced onion, mustard, cheese on grilled Texas toast... Oh buddy !

Here's the recipe:


Olive Garden Salad Dressing
1/2 cup mayonnaise
1/3 cup white vinegar
1 teaspoon vegetable oil
2 tablespoon corn syrup
2 tablespoon Parmesan cheese
2 tablespoon Romano cheese
1/4 teaspoon garlic salt, or one clove garlic, minced
1/2 teaspoon Italian seasoning
1/2 teaspoon parsley flakes
1 tablespoon lemon juice
sugar (optional)
Place all ingredients in a blender until well mixed. If this is a little too tart for your own personal taste, add a little extra sugar.

Like I said, it's close, but not quite the same. It's tart, but I like it that way. You can add sugar if you like, but I don't. I don't use a blender either, just a whisk.

This was my first time smoking bologna. It's just something I saw here, and wanted to give a try. A couple of hours on the UDS added a real nice smokey taste to it.
