Well, the TFO surprised me with a request for Chinese style crispy skin chicken.
I ground out spices like star anise and white peppercorns and so on till I had a powder and seasoned the dry chicken skin and put it in the BSK at a high temp and micro managed the cook.
Came out perfect despite the low light phone camera shots, extremely moist and crisp crunchy skin.
