View Full Version : Butts done at 185F???

Ive got some butts in the wsm. Been on 12 hours at around 250-260. Maverick has a butt at 185. I went in with my thermapen and started stabbing the two butts on the top rack, and didnt get a temp higher than 188, but they probe LIKE BUTTA. Though this is also with a thermapen which is small and sharp. Anyone pull butts before 190 and had completely pullable meat???

i let mine go to 200-205. see if the bone will pull clean from the meat or if it resists.


those look great. got me starving after breakfast.

just re-read the "like butta" part. they could be ready.....

185 is usually when a but is sliceable. I agree with deep south 200 to 205 for pullable pork.

It's certainly possible, but those don't look done. The meat looks like it still pretty tight around the bone.

185 and you still have too much unrendered fat. 205 in the center of the thickest area and you are good to go. I've even gone to 210, but then some of the thinner areas are getting a little dry

yea the pic was from a couple hours beforehand. I normally take butts to 195-200 when not using foil. I did find a tough spot in the center with the maverick probe so they're staying on for a bit longer, but for the most part its like probing a hot knife through melted butter. These are for some paying consumers so I dont wanna dry it out:rolleyes:

shake the bone...it will tell you if it should come off....those dont look done..

If youre going to foil, cooler,and hold for couple hours go ahead and take em off. The color looks good, but hows the bark.

i agree with the above comments re: bone. give it a twist and see if it pulls out. they still look a bit snug on the bone.
