I fired my UDS up and had it dialed in at 250. I put the brisket on around midnight. I was supposed to check it at 2, but slept til 4. I just checked it and the temp had dropped to 125. I stoked the fire and have her cruising back in the 250 range now.
My question is this......Is the brisket still good? I don't know how long the temp was that low. It could have been 30 minutes or almost 4 hours. I have no idea.
