Well here it is my first packer. I think i have already goofed i trimmed off the fat layer i got to carried away when trimming. I have Myrons book and it instructed me to cook in a foil pan for 3-3.5 hrs at 350 then cover for another 2 hrs then rest for 4hrs so thats what ima gonna do. When it comes off for wrapping and resting i will be doing burnt ends any pointers on this would be great. With the exception of the fat layer i injected it and rubbed here is some pics of the begining and more follow as the cook continues.

Well here it is after its been cooking for 6 hrs the it was 200 and probe like butta now its resting for two hrs and i will prepare for the burnt ends.

Looks good too me. You might have got a little carried away with the knife but I'm sure it be wonderful

Looking good! I just did this also (followed Myron's book recipe). Here's my post: http://www.bbq-brethren.com/forum/showthread.php?t=126989 with pron. Turned out very good. Hope yours does too.

Naw its for dinner today i know its a little early but i wanted some holy crap time cuz we are having company for dinner, i figure better safe than sorry. Ive always cook brikets and had to rush them never rested long enough you know the story,so this time i want it done ahead of time ya know so i can shower and not smell like what i am eating.

Well it turned out great much better than i thought it would have with cutting off the fat cap. The 4.5hr rest definatly helped here is the rest of the pics from dinner i also cooked the peach beans which were awesome and mac salad with cornbread sorry i didnt get those pics just the meat.
