i'll be grilling a whole red snapper in about an hour.....

Man that looks awesome!! are you going to encrust the whole fish in salt/sugar or just grill with that on top?

i did that about six hours ago. covered it, top and bottom, with the brown sugar/kosher salt mixture. i just rinsed it off and covered it and put it back in the refrigerator until i put it on the grill.

I never tend to add sugar to snapper. Is that something you do on a regular basis or were you just doing it like how you would salmon? How was the sweeter side to it?

That was my first time using sugar on a whole fish. The taste was very subtle. Super fresh and clean.
