My butcher is getting packers in now. Went in the other day and I was so happy it was like going to see Santa. Got one and went to town on it. Black pepper, seasoned salt, and granulated garlic rub. Smoked it at 225-ish for an hour or so and then cranked her up to 325 for the rest of the cook. No foil and no internal temps taken. Pulled it off when she looked pretty and probed well...maybe at the 6 hour mark or so. Didn't make burnt ends as my buddies like eating the fattier slices. Thanks for checking it out.....
