Just finished making some chicken thighs with my new Chicken Scratch rub. Here are some pics:
Fresh from the smoker

Now here is a little secret...
Those are skinless thighs! Pulled it all off before I cooked them. Could you tell before I told you? Probably not. Be careful because this is addictive...you'll find yourself eating "just one more thigh" even when you are stuffed.

1. There is a lot of fat in chicken skin. Especially the thighs.
2. They are a bitch to get right.
3. My Bigmista's Chicken Scratch Rub tastes best right next to the meat.
4. Because I tried it and I liked it. It made a nice crust on the outside and I didn't miss it at all.

I'd rather come to one of the markets, but it's hard to work around taxiing the kids and whatnot, so I'll be ordering online.

Cool Neil, looks like you nailed it! How much rub did you have to put on to get it crusty? I'm guessing it would work on spatchcock chicken huh?

Looks great and certainly fooled me! Curious - are you considering going skinless in 2012 for competition? I would think they would do well but then I'm not a judge!
I did a chicken practice cook the other day and couldn't help thinking that maybe prepping chicken is what pushed Buffalo Bill over the edge!

No therms. About 4lbs.of "K" piled in the center of the Ranch Kettle. Thighs circled around the pile but not over it and vents wide open. Cooked about 40 minutes. Old School and easy.
