hi ok iam not a experanced smoker
have tried it a time or two with mixed results (by accdent)
so now i have a newbronswell smoker with the fire box on the side and
a 16x16 by 3 foot tall section with shelves
and i dont know how to get consistant results
once things worked fine but not great next was ok but lota burnt smoke taste...

seems it is a not enught or to much deal with this
how should one of these be used ?
i made jurky in my dehightor but what i tryed to make in this ... well dogs liked it fine and i ate a lot of it but no one else liked it much

and brisket.. did not work at all ...
so any o you folks out there know how to use one
gosh.. start typeing if ya dont mind!!!

Sounds like you have a New Braunfels Bandera, it is a great smoker, but, there is a learning curve for sure. There are folks on here that really understand those cookers. One thing, what you are describing sounds like a bad fire and heavy smoke. You might want to read up about using a small hot fire and getting what is called light blue smoke.

In essence, what you want is a light blue, almost inviusible amount of smoke. This takes some practice. Hopefully someone with more experience with a Bandera-type cooekr can post.

do you mean a new braunfels if so you may not have a clean hot fire and that is causing the over smoked taste, when smoking make sure the exhaust is all the way open and control the temp with the intake, before putting on whatever you are cooking the smoke coming out of the exhaust should be very faint and a bluish color (almost invisible) that is a clean hot fire. if it is bellowing thick white smoke the fire is smoldering and that's where the over smoked taste is coming from. I am sure some of the others will be able to add some other insight as well but hope this helps some. BTW is this a new models or one of the old models?

wow ... yes i recall tring to use the vent on top to regluate temp
and i do recall light white smoke the last time
so the top is wide open and the lower is almost closed
...
yes i can do that i think ...
i smoked bloagna and it was wonderfull the first time
the 2ed had that ash taste quite a bit
cut off the out side edge and it was quite ok
but i want to do jurky in this with real smoke
...
so a learning curve...
no real way to short cut it from wiser more experanced smokers..
well i may try to smoke again in a few weeks
i will be useing black cheery that grows here in fla.
the wood has a sweet smell ...
wish i coujld get the apple i used to get in va
when they trimed the orchords
but i also have some pin or black jack oak here too
any other advice is great
