I do have to say they are delicious, I have been making them for a while since I seen them on Rachel Ray's 30 minute show one day while channel surfing,she was doing the same thing but with baby yukon golds to go with steak and asparagus.

The sky is the limit with ideas on how to top them. In this photo I used S&P, fresh rosemary and then 10 minutes before they were done I added some grated asiago/rosemary cheese to the top.

Doesn't have to be done with small potatoes. You can use any kind of potato. If I use bigger ones, I just cut them in half or quarters. Works the same way. I'm eating one as I type this. It's a sweet potato. I drizzled it with a little maple syrup. Absolutely delicious. :wink:

If you use small potatoes, you can pour out the water and shake the pot with oil in it till they are broken a bit and fluffy, then simply pour the into the tray and you are set to roast

I do this with quartered, regular Idaho baking potatoes, draining the water and returning to the pan, then drizzle with olive oil, S&P and some rosemary, then "crash" them around in the pan. I put them into an aluminum foil pan and put on the indirect side of the grill until they are done.

Also made em tonight. Spiced with Dizzy Pig Jamaican Firewalk, and covered in melted cheddar. Good Stuff!!

I like the idea. Sounds simple. Should be simpler than making fried mashed potatoes or herb potatoes.
I'm going to give them a try soon.

I told the wife about this at lunch and by 2PM she was boiling potatoes. These are GREAT and so easy.

I made these last night and topped them with roasted garlic and cheese. They were incredible.

Count me in as a fan! I used rosemary since it's the only herb surviving the winter. Next time I'm going to try a little Greek style by drizzling with some lemon juice and using fresh dill. I used the bottom of a large soup can (sprayed with Pam) to mash. Good stuff!

I made them with fresh sage from my garden and also added grilled onions and cheese. I baked them in a cast iron skillet.They were delicious.

Good to see another Aussie innovation in modern cooking taking hold!
I still prefer EVOo drizzle and citrus and herbs, thyme etcetera . They are all good tho.

I made them this weekend too. Very tasty. Now I just have to figure out the right amount of cheese for them.

Made my first batch tonight, very good! The crispy skins were awesome.

Next batch, I'll smash a bit thinner and use more olive oil.

I like the roasted garlic idea, and someone had a suggestion for bacon topping that I may try. Maybe fry up some crispy bacon and crumble it on top. Wouldn't hurt to drizzle some bacon drippings on top would it?

question? best way to do them .. oven... grill.. smoker? or makes no difference?
