View Full Version : Chile Rellenos Skillet Style

I usually make these individually, stuffing with smoked pork, smoked chicken, grilled chicken...

this time I use beef cheek meat and asadero cheese and make them in a skillet...


blistered and steamed my peppers..then peeled and seeded them.

made my beef cheek, minced onion, asadero cheese filling and seasoned it with SM Season All..

whipped 8 egg whites, folded in 8 TBS of flour and 8 beaten yolks.

layered half of the batter into a skillet, then added the stuffed peppers..

topped them with the remaining batter and sprinkled with SM Season All...

into the smoker at 325F They took about 45 minutes. I used the toothpick method to test the batter..

The breeze was just right to torment my neighbor with the aroma. :)
My neighbor's ranch house is in the clump of trees on the horizon...

In a crisis this morning, left my whole chili harvest in the BSK smokeing at 150f and unattended it got too hot and all I got now is charcoal.
Trying to get too much done at once and paid the man penalty for not being multitaskingly effective...or capable even.:oops::mad::cry:

I love the effort to roast the peppers first... Getting rid of that pesky skin and infusing some roasted flavor is half the battle! Gosh I hate Mexican restaurant rellenos that batter and deep-fry peppers with skins on them. Thank you for my daily inspirational.

Me too Prudog! It takes a little time to blister and peel them but it's worth the effort. Thanks! :)

It's the same batter I use to fry them..... when cooked like this it comes out thicker...hmmm...not sure how to describe the texture.
I usually dip them and fry individually..

Never seen rellenos done quite that way. Very creative and delicious looking! You have certainly put a new twist on something good. Poblanos may work well for that too, I'll let you know ;)
