I don't get over here a lot, but thought you folks might me interested in a stuffed meatloaf we smoked on the mini UDS. Mixed about 1 1/2 pounds ground elk with 1 1/2 pounds elk hot Italian sausage. Spread out and layered with green chiles, mushrooms, sliced ham and mozzarella cheese along with some onion and garlic. Smoked for about 3 1/2 hours using Kingsford blue and a fist size chunk of pecan.
