Well I finally finished it.
Did a 4 hour burn in with some Hickory and Kingsford.
I think I am ready for some meat and smoked beans tonight. Any suggestions?

Very nice looking UDS. You gotta start with a fattie to help it get that nice amber patina on the inside.

Don't Phorget to oil up the inside if you haven't yet.
I was going to go with a fattie. I cannot decide on a recipe. Too many stuffing's and add on's to do. All of them look awesome.
I found out that my kids dug out some Angus Short Ribs out of the freezer this morning. So I guess that will be the first cook tonight after I get off work.

Don't need to stuPh your Phatties or bacon weave them...just buy them JD sausages you got over there,rub em and smoke em....couldn't be simpler.:thumb:
Anyway...just enjoy your cook and get that patina on the inside!

Great UDS! Looks like mine with that cherry red. What did you use for the thermometer probe?
I stopped at Ace Hardware and they had a Bayou Classic Deep fry on sale for $2. I couldn't pass it up for that price and it's said it was dishwasher safe. :becky:

I didn't get to cook on it last night. I did get an Angus Arm Roast out for my wife and kids for tonight. Going to throw it all on when I get home and lite the UDS up at 3.
I might be cooking till 7 or 8 tonight.
This is going to be a first.

Looking good. Other than getting on with a few cooks to get things going, I'd go buy one of those roller diddies that fit a 55 gallon drum for easier movement.

Food was almost gone before I got the the table. I kind of wished it had a little more smoke flavor to the meat. Rib's came out great. The arm roast needed a little more time on. It wasn't tough but wasn't where I would of liked it. That is a tough piece of meat to cook anyway for me.
I'm new to smoking. So I am going to have a learning curve I need to work with.
I'm woundering if HoDeDo is going to do a UDS class. I'll be there.

I'm working on that. I have a few bed frames that have been donated to me. I recived a set of casters Monday this week. I found that I really need a table added on. and am planing that in the next few weeks or untell I get motivated to do it now.
