I was off work last Friday and decided to smoke some fish for the first Friday of lent.
After a trip to Costco I had a big package of salmon and a pound of crab meat. Decided to make stuffed salmon.
First cut the salmon into portions and made a pocket in the middle.
Then I mixed up the stuffing. Pound of crab meat, cup of bread crumbs, half a cup of Sharp cheddar, some rub for seasoning, two tbls worchestshire sauce and an egg to help
Bind it all together.
Put a big pile of stuffing into the pocket.
A little more rub sprinkled on top.

And then onto the UDS at 300 degrees until IT of about 160.
Came out like this.
Wasn't much of a sacrifice giving up meat for the day.
