First long smoke on my UDS, man what an experience!

6.87 pound chuck roast

Put some yellow mustard on it and used my PaPa' Stuff for the rub

I was planning to do this a week ago, but the "deification hit the oscillating rota-tor) http://files.smokingmeatforums.com/smilies/frown.gif

So I wrapped it up, and put it in the freezer.

Took it out about Wednesday night, and thawed Chucky out...little did he know, he was in a world of hurt.

Friday or I should say, Saturday Morning, I started my mission.

About 16 hours from star to finish.

Looks great. How was the first chunk you tried? Was it almost done then?

love the video and love the fight you gave that thing to make sure it came out right! you will get a good feel for your uds, it took me some time too. the beef looks great with a great smoke ring. oh and by the way, i laughed at your joke about the butcher named chuck:clap:

Oh Ya,

It was juicy and tender, and I was thinking at that time to, pull it and have slices, instead of pulled beef, but I am a stubborn old coot and wanted to do my first pulled Chucky.. Man am I glad I did http://smilearchive.com/s/contrib/corky/corkysm60.gif

Thanks Man..I really enjoy my days off when I can get them.

I have a long way to go with my new "smoking obsession", but with the help of the folks on this forum, it won't be too hard. :mrgreen:

I'm thinking of putting another ball valve on the bottom intake to get more control, not too expensive and what the hay, won't hurt it none.
