$22 for a 10lb box. First of all, is this a good deal, and second, does anyone have any good recipes for it?

Very good deal if the quality is there.
Pollock is a lean white fleshed fish.
Cook it as you would a cod or red snapper.

Could these be smoked on a UDS, or would they come out mushy?

Pollock is great breaded and deep fried. I imagine like many other mild white fish it would be difficult on the grill unless you used a fish basket.
