Sorry for the phone cam image, but so delicious its worth sharing.
I sliced onions, shallots, lots of red paprikas and yellow sweet peppers and a couple of bell peppers and garlic and hit them with 450f and hickory, then added kransky sausage slices, red kidney beans, tomatoes and 8 sprigs of fresh thyme and cooked for 40 minutes more stirring a few times.
Sweet result, literally.
Seasoned after with sea salt and ground pepper.
