Now that I got everyones attention.. How should I clean this greasy mess ? Keep in mind this is a major cleaning. Do I still need to worry about food safe cleaners? I will be throughly washing after the grime is off.
Whats the good stuff?
Simple green is too simple in my opinion.

I use oven cleaner on my grates and than seal them in trash bags for a few days. Then they get pressure washed. The come out looking like new.

If it is portable, take it to a "do it yourself" car wash and use the engine cleaner option and give it a good wash with hot soapy water. Should turn out pretty clean.

i always use oven cleaner. but if its aluminum then you might have to just scrub and scrub. a hard piece of sharpened nylon will help a lot.

I don't see the problem. It's well seasoned. Maybe vacuum out the loose stuff in the bottom. Other than that I wouldn't worry about it unless you are trying to sell it.
The grates can be burned off.

For my grates and burners, I use my self cleaning oven, just toss every thing and hit clean. For the shell I use oven clean and elbow grease
