Mornin' folks. I just started a chuckie on the UDS for the holiday. Here's a pic of my assistant pit master and the meat:

If I wake up early in the morning she is hot on my heels :thumb:. My 4 year old will sleep in but this one is like my shadow (can't tell I love it can you?):

Cute assistant you got there! I have one of those too! Can't keep him away (not that I want to).

I'm sitting here, finishing my morning coffee.....kids are out of school today....wife's a teacher and is also not working......these days SUCK! Thinking of calling in......already wasted 2 hours of my productivity!

Well here she is. If I had to critique the final product, I would say it was just a tad on the dry side on the blade side (think that's the name anyway...the portion next to the eye). This definately made some good sandwiches!

I cooked it at 250 until it reached 195 internal. I put it in a pan and wrapped at 150 (stalled there for around 45 minutes). Next time I thinlk I'll cook it around 275 to see if I can retain a little more moisture.
