Sometimes I like to keep it simple.
Full rack of spares, sea salt and fresh ground black pepper.

No rub, no sauce, no foil, no baste.

Ribs and a smoker S&P. Period.

5 hours at ~250 with hickory chunks on first half of cook. Hardwood briquettes throughout.

Thanks for reminding us (me) about simplicity. Here I was, about to finally start making my own rubs, instead of buying others. :doh:

Those look damn good ... HOWEVER, I'm southern so there's no way I could do naked BBQ. I really think it's against the law to have dry BBQ around here ... if it's not, it should be

Nothing dry about them.
They were dripping in porky goodness.

Besides that whole sweet BBQ sauce thing is a Yankee and Midwestern creation. True southerners don't need no sauce, unless of course you are from SC...in which case you get the "Maurice Exemption"
(named for the SC chap that invented mustard based BBQ sauce and inflicted it upon SC like a curse)

That is by far my favorite way to cook and eat ribs. Super simple and nothing but smokey pork goodness!
