5lb sheepshead brined 30 min and bathed in eau de hickory for 5 hours at 130 degrees. The skin peeled off easily and the meat flaked from the bones. Mixed the meat with capers, lemon juice and Pig Pen seasoning. Put it on toasted home baked bread.
