Competition BBQ season is still a few months away in the northeast, but practice continues year round.

This looks absolutley delicious! I never even thought of trimming around the money muscle prior to the cook. If you don't mind me asking, what's the purpose of the aluminum pan surrounding your butt?

Thanks Pig Daddy. The pan helps keep the cooker clean, makes it easy to move/rotate the butt in the cooker, makes it easy to wrap with foil, and in the case of a vertical cooker, acts as a heat deflector. I use a rack in the bottom of the pan to allow smoke to get all around so I can develop bark on all sides.

Awesome stuff. I have never trimmed around the money muscle either but will be giving that a go on my next practice. That is either a bigger muscle than we get in the uk or you are taking some of the surrounding meat with it to make it bigger.

Thanks for sharing. Is the bottom cut out of the pan? Or is the bottom in the pan and the butt is raised atop a grate in the pan? Hard to tell from the pic. Either way, the pork looks fantastic!

The bottom is not cut out of the pan. The grate raises the pork off the bottom.
