Smoked some ribs yesterday for New years but more importantly fort he Browns vs Steelers game that I am sure no one cared about other than Browns' and that other team's fans. My Brownies lost giving them a stellar record of 4-12:mad2:, but they put up a good fight which did not cause me to lose my appetite before i ate the ribs.
I trimmed the spare ribs st. louis style and my trimming skills are quite poor and my knife is even worse so i think i created my own style with these. Did a mustard slather and rubbed one with Plowboys Yardbird and one with Cimarron Doc's Sweet Rib Rub. Put them on the smoker for about 2 hours and let the temp stay between 250-275. Foiled them with butter and honey for around 35-40 minutes and then back on the smoker until done which ended up being almost 2 hours. This was the 2nd time i had done st. louis style ribs and these were an incredible improvement. super moist and the perfect tenderness but not mush. As always, I couldn't have done it without all the help from the brethren:thumb:. I was amazed at how much liquid pooled up in the foil once i took them out and i added some of that to some blues hog to thin it out a little and used that to sauce the ribs and it was farkin fantastic!
