Decided to smoke a little Opah tonight. This is a trial run as we have never smoked Opah before. Only about 1/4 lb of meat cut into 5 funky shaped strips will be smoked. We didnt want to commit to smoking a large quantity since this is our first run.

Brined for about 45 minutes, rinsed and on a rack to set up the pellicle.

Now I just need to decide what wood to use. Cherry, apple or peach. Leaning towards peach or apple this time. Any thoughts?

apple and fish go great together , although I finished up some salmon last night with a little cherry

85% humidity over the past week has made a chimney tough to light. The smallest smoke in my smoking history is finally on.

Opted to use the apple wood....thanks brother smokestack.

Turned out great. Pics wont load, so tomorrow for sure.

At least it wasnt striped marlin this time.

Finished product.

It was very good, but I'll stick with the striped marlin.
