One of my best friends asked if I would cook some BBQ for this wife's 30th bday this weekend. So of course I said hell ya. He even insisted that he pay for all the food even though I was going to gladly going to do it as part of my gift. Since I will be transporting it and have to help setup the day of I'm cooking the meat ahead of time.
I got 15lbs of butt and 19lbs of chicken thighs. So pulled pork and pulled/chopped chicken. Going to smoke the chicken for about 2hrs at 225 with the butts on there as well. Then once the chicken is done I'm gonna ramp it up to 300-325 to finish the butts.
Using Lilly's rub for the butts as I had some extra in the panty I forgot about and using yardbird on the chicken. Also when i've been doing pulled chicken I started doing half with skin off to get a little more smoke into some of them.
Going to be about 22 people. The day of I'm also going to make mac n cheese, coleslaw, and deviled eggs. Should be enough.
