It's about 2.5-3lbs. What's the simplest/most cost effective way to ship it from Nashville to Phoenix?

Freeze and special ice packs in an insulated box and overnight it. No real cheap way that I know.

I have no problem shipping briskets that have been hard frozen (about -20*) to NASCAR.

Normally I pack them in a cooler, box it and ship out 2nd day. Now I'm talking more weight than you are, but if you also pack in some hard frozen cold packs you should be more than fine.

When I fished in Alaska we sent 265 lbs of fish via fed-ex and it was still sfrozen solid the next day. They froze it at a very low temperature and insulated the box well.

People eat themselves sick when I make it. I get more compliments about it than anything else, cooking or otherwise.

Yep, freeze it, pack it in styro with cold packs and next day it. Good luck.
