I absolutely LOVE chicken thighs, and I typically do them over oak on my Santa Maria pit. Since I have an abundance of briqs, I decided to utilize my OTG today. For this cook, I used 1 chimney of Stubbs, and had the Kettle cruising at around 325-350 on the hot side. I used a combination of direct & indirect during this cook, and I think they turned out nicely. The meat was moist, and the skin crispy.
Half was coated with a 50/50 mix of Santa Maria/HDD, the other half I used Rub Some Butt...It is a Carolina Style mustard & vinegar rub I received from fellow Brethren caliking (http://www.bbq-brethren.com/forum/showthread.php?t=120839), really nice flavor.

I also had a couple few peppers in the fridge, so I coated them with EVOO & Santa Maria.

Broccoli? Why not...I sprinkled some toasted pine nuts for good measure. This was a fantastic meal, I really like the flavor profiles that both rubs bring to the table...Thanks for checking it out :thumb:
