The local butchers recommended this cut as tender and tasty. I had never tried it so I picked one up to do for the latest Throwdown...

Hadn't tried Yardbird on beef so I figured I'd give it a try...

A little snack of smoked salmon and cream cheese on crackers, pickled asparagus, black olives and deviled eggs while the grill comes up to temp...

Seared on one side and flipped. The chicken is for the gals in the house who don't eat beef...

I took it up to about 125, pulled it and foiled it to rest for about 10 minutes. Plated with some whole grain rice and broccoli...

You actually have people who live in your home that DON'T eat meat? :shocked:

The welcome mat is always on the front porch so the invite is always there too... :becky:

Sad to say, neither my wife or daughter are big meat eaters. My daughter will only eat seafood and chicken. My wife also likes seafood and chicken, but will only eat beef and pork as long as she doesn't have to cut it with a knife to eat it... :confused:

Good stuff Al :thumb: Do you mix anything else in with the salmon and cream cheese? I have a bunch in the freezer and I am always looking for new ways to eat it.

all looks fantastic , Al. Chuck eye is probably one of my favorite cuts for steak. inexpensive, yet hard to find (in my area) yet oh so full of beefy flavor!!

Good stuff Al :thumb: Do you mix anything else in with the salmon and cream cheese? I have a bunch in the freezer and I am always looking for new ways to eat it.

Some friends actually gave us the smoked salmon which was chunked and shredded. Not sure what kind of salmon it was, but it had a good blend of sweet, salt and smoke. I mixed a bit of granulated garlic, Old Bay lemon herb and pinch of crab boil with the fish/cream cheese and then tossed it all into Mrs. C's stand mixer to give it a good stir.

Nice pron!! A local meat cutter turned me on to this steak years ago but wish people would stop mentioning it. :blah: This steak is cheap and tender! The more the word gets out there, I'm guessing the price will go up and harder to find.:drama:
