I went down to Cape Hatteras last weekend to go King Mackeral fishing and managed 3 nice Kings.

While I was cleaning/processing the fish I was looking at my newly built UDS and thought I would smoke some up

I rubbed some of the shoulder meat with EVOO and sprinlked with Old Bay seasoning.

I then got he smoker up to 250 degrees and smoked the fish for an hour using some left over Cherry from the previous smoke and I made a smoke bomb with some Jack Daniels barrel chips.

I pulled the fish and made some King Mackeral spread for the guys at work. I also brought a couple of peices plain so they could enjoy the great flavor of smoked fish. Sorry there are no after smoke shots but my camera started acting up AGAIN :mad::mad:. Thanks for looking.

I make the spread just like you would do Tuna Fish except I add a little more mayo and add some Old Bay to taste.

King Mackerel is my favorite saltwater fish after Amberjack. I'm jealous.
