I did 2 16lb Turkeys. One brined in PatioDaddio's Ultimate Turkey Brine, and the other in Smokinokies Turkey Brine. Both brined for 17 hrs and then sat in fridge uncovered > 20hrs. Both had a herb butter put under and on top of the skin. Both ahad ice on the breast for about an hour. Turkey cavities sruffed with apple, carrott, onion, celery, and fresh herbs. White wine poured over the birds and into the cavity. Stock made from the necks etc poured into the pan. PatioDaddio's brined bird was put on the egg @ 325 and the other the oven. The Egg was done in about 3 hrs The oven a little over 4 hrs and invcreased the temp to 350. People loved both turkeys. 12 people almosed devoured two 16 lb birde and there was a lot of sides. Both brines were excellent. I would not hesitate to use either again. Cant pick out the best as one was oven the other egged. Personally I like the Egg better but I like Turkey cooked that way. Both were very juicy and flavorful
