Greetings,

To celebrate MOINKsgiving, I thought I'd try my first batch

The raw ingredients. I used my own homemade rub

After stringing four per wooden skewer (I h ad no toothpicks), I laid them over a baked goods cooling rack with a pan underneath to catch/recycle the rub.

After seeing someone else's pictures, I placed the MOINKs on a broiling pan with boiling water underneath. The plan was to catch drippings and add moisture. Easy clean-up was a plus!

I put 3/4 of a chimney full of Kingsford blue in the kettle with some hickory chunks. I didn't get fancy with the fire since it was a short (two hour) cook. I also noodled with the lower air intake to try and keep the temp at 250F.

Cook complete! Now off to a towel-wrapped Pyrex dish, a super-insulated cooler, and Scituate, MA:

The final product. I finished them in my own sauce in a skillet over a gas stove (since the lit grill was 125 miles away at home!), so they are not IMBAS-worthy. They still met with rave reviews.

The one thing I'll do different next time is start with smaller meatballs. As an appetizer, they were kinda big to pop in your mouth; you had to eat 'em viking-style!

All 24 were eaten and plenty accused me of "ruining their appetite" for turkey! Enjoy!

They look good but IMBAS would have an issue with the bag on the left being made with "chicken, pork, and beef". I guess those would be "CLUCK-OINK-MOO" balls or maybe "MOOCLOINK"? I dunno but would eat it anyway.

Thanks, I had not noticed that major MOINK discrepancy! It is quite the gammish o' meat they're puttin' in them balls! I formally ask for IMBAS forgiveness....forgive me for I have sinned!

They were still tasty!
