It has been decided that since the family gathering will be delayed and has seen enough poultry recently... we had a substitution.

Please allow me to submit the following evidence... fire roasted strip steak.

Was seared 3 minutes direct per side... then indirect for the remaining time (Montreal Steak).
Pulled off @ 145*... a few minutes too late... however tenderness and flavor was spot on.
