View Full Version : My first 'smoked' ham...

Second cook on my UDS, I went with Dr. Chicken's double smoked ham/sweet Kiss of death marinade combo...

Here is the starting point, a Hickory smoked ham, no water added beauty, trimmed, just prior to injecting and wrapping...

I used a "water pan" for the first time, I decided to kill 2 birds with one stone and make a side dish with the pan. I used sliced pineapple in natural juice, and maraschino cherries, added some 100% orange juice and water...

Here is the ham, pulled 5 hours later with an internal temp of 130...

I added some Splenda Brown sugar blend to the friut pan and cranked it up to do a little caramelization as it reduced...

Also, I did a skillet no bottom apple pie, (think big apple dumpling)...

All in all, I was pretty happy, and all the family members raved about it all, so I guess I did OK. Already got my own tweaks for the next time planned, lol...

I did a ham with our turkey as well today! Nothin like a good smoked ham!

Tasty looking ham! Been a long time since I've seen anyone cook pie in a cast iron skillet. Boy does that bring back memories of the Blue Ridge Mountains! Thanks!:-o

Fantastic job. Fruit in the pan was a splendid idea. Bet it was a compliment to that nice smoke flavor in that ham.

Very fine ham! looks a lot better than mine. The wife insists I double smoke all our hams now.

Love the Dr. Chicken Double Smoked Ham, that's the only way I cook hams these days. Yours looks delicious, great job. :thumb:
