View Full Version : Turkey temp help - breast at 145, thigh at 175

At a friend's recommendation, when cooking my 16 lb turkey on our kettle, I put foil over the breast to keep it from browning too quickly. After two hours, I'm realizing I kept the breast from cooking, because the thighs are reading at 175 but the breast is still at 145. I pulled the foil off the breast and wrapped it around the leg/thigh area to try to get the breast to catch up.

When would you pull the whole thing off the kettle?

Everything is normal.....there is always a temperature difference between Breast
meat and Thigh (dark) meat. Pull the Turkey off when the Breast meat hits
165 degrees.

Thanks. I knew there is usually a difference, but mine seemed extreme. In some spots the dark meat is 185+ while in other spots the breast meat is 135.

yea, i had same problem. but i didn't know till turkey was being cut up :(
