View Full Version : Last Minute Turkey Question

I know there are a million variables to consider, but I have a 7lb bone-in Turkey breast that I am smoking tomorrow. I would like to have it done by 11:30am to give it time to rest. What time would you put it on the smoker, given smoking temp of 250*? The research I have done seems to say 1 hour/lb. I have no idea if this is right. When I have smoked turkey breasts in the past, I have not timed it.

At 250F I'd say about 4 to 5 hours of cook time will be needed. Pull at 160F internal. If you brine it, bump the temp up to 275F to 300F and it may get done a bit quicker like 3.5 to 4 hours and still be moist. When cooking at a higher temp, you should be able to pull it at around 155F internal and let it rest until the temp creeps up to 160.
