Yesterday I did three racks of STL spares that I rubbed down with SM Sweet Seduction and popped them on the uds at 250 for almost 4 1/2 hours and they turned out pretty good.

everyone loved the SM rub and they were awesome!!

That looks so good. Did you do any foiling or anything like that or just left em on for 4 1/2 hrs?

No I didn't foil them this time, some times i do others I don't and this was on I just let them cook, but I did let my cooker get up to 260 and settle in there where I usually cook around 225. They came out moist ad had just a bit of bite to them which is the way I like them to be. I think the higher heat helped cook them a little faster (they were thick) and kept them from drying out.

My last couple of racks of ribs were smoked between 265 & 275.
They have about convinced me that 275 might work best for me on my UDS.
OR
Am I just being lazy and wanting to get them finished faster?
They do taste good though...

myself and the family is in love with SM sweet seduction, it is my go to rub for almost any cooking I do now, which reminds me I need to order more.

Nice "wibs"! But, my wife would throw a hissy fit if I tried to prep them on the bare table.

I prepped them right on the table after scrubbing it off and when i get done she always knows I scrub everything u and make sure it is clean so she doesn't mind, she would probably let me get away with not cleaning and letting her do it just so I will keep up the cooking she loves but I am not even going to try to push my luck that far.

Yes I did Boshizzle it was on the back deck when I got back home yesterday afternoon I will start using some of it this weekend, and once again thank you for putting it up for the drawing.

Great looking ribs! I have a suggestion though. Try using a bus tub to rub your ribs in then roll a fatty around in it when you are done to soak up all the leftover rub. :cool:
