A friend of mine over here got his hands on some of the sauces and rubs from BWW, and he says he is never gonna use em, and lets me take what I want. So, I get some of the chipotle BBQ and Desert Heat rubs, and some mango habanero wing sauce. Tonight we soaked some thighs in some italian dressing and some other items, nothing too crazy. They get dusted with the desert heat before they go on the WSJ. Cooked em indirect with mesquite as hot as little Wendy would go, then going direct to get some more color (sorry no pics, cooking by flashlight!).
So, I could taste the marinade a little, but the rub was pretty darn outrageous! Got some smoke, sweetness, saltiness, and a non overpowering heat that did *not* build with every bite. All of the flavors were balanced, and I was extremely upset that I could only eat four pieces as this stuff was great!!! New plan for the weekend. Make 7lb of chicken thighs, use this rub, and do not share. Winning...
