I know this is kind of a basic question but I found some Butts for .99 lb. They were only about 5 lbs each and maybe not the quality Im used t . I was wondering what else I could do with them other than smoking? Any recipes or ideas would be greatly appreciated.

Pork Steaks are cut from the pork shoulder best done by the butcher's wicked ban saw. Other than that I guess you could make pork carnitas.

Make sausage. Pork chili. Cure it for buckboard bacon.

If they have a bone use a fillet knife and bone out. Then cut them into 1 inch thick steaks. They call them country style ribs, I slow smoke them at 250 for about 4-5 hours.

Sausage or Pork Steaks. Throw the trimmings into a pot of water and make pork stock. Inject that into your the next butts your smoking :wink:

+1 on grinding for sausage. Butts have great fat content. I will grind them and mix with spare rib trimmings (when I trim spares do St Louis style cuts) and make sausage. Comes out great and adds fat that the spare rib trimmings lack.

Grinding for sausage sounds like an awesome idea, but I have little experience doing that. I am sure there are some good sources of info. out there though. Probably on this site.

I am a big fan of pork carnitas or cochinita pibil. I have been on a big slow-roasted Mexican styled pork kick lately. Tasty, tasty stuff. I made a big batch back in August, but will probably be doing it again before Thanksgiving.

Pork steaks are great.

I have been known to throw a butt in the oven with some stew veggies (carrots, onions, etc). Makes a nice pork roast.

you could do cuban style roast pork and baste it in mojo during the cook (in the oven) and cook it till it falls apart. very tasty.

Sausage. Butts have enough fat, unlike other cuts, to make good sausage and you can't beat the price.

Thank You All for the ideas. Im thinking Carnitas and maybe some cuban style. Now I just need to learn some recipes. Ive found some on the web but not any that grab me just yet. Seems like Carnitas are kind of basic and probably should stick with that. Seems like it has great results.
