View Full Version : What is a safe stonewear to use for BBQing?

Good morning everyone! I presently own two Large Kamado Joe and one Large BGE BBQ. I want to expand my cooking ability with my Kamado style cooker. I was woundering what type of casserole and stones that are safe to use inside them cooker.

I want to start baking pies, cakes etc... I was looking at getting some of these: http://www.radacutlery.com/Category.asp?SRCH_CATEGORY=Cat43
but don't know is they are safe to use with BBQ's.

I have no experience with using stoneware in a grill or smoker, but, many folks have used pizza stones that were designed for the oven only to have them shatter because of the intense heat of the charcoal. If you have a heat barrier between the fire and the stoneware (like a platesetter in a Big Green Egg, it would probably be fine.

For pizza/baking stones, I use the Big Green Egg stone. Lots of Brethren have also used the Red Sky grilling stone with no issues. Both of these were designed for grill use.

I have used Pyrex in my kettle, it works fine. I tend to use the stainless pan for stuff in the grill, unless I want heat retention, than I go with cast iron. As for stoneware, I am planning on picking up a clay pot and stone pot from the local Asian kitchen shop.

I would probably not use normal decorative stoneware in a charcoal cooker. I really think cast iron or clay pots are the way to go.

I've heard reports on the eggheadforum of Pyrex shattering, so I stayed away from it.
But I have used Corning Ware, Cast iron, a Rommertopf clay pot, and I have a Tagine that I'd like to try in the BGE.

I have used all sorts of stoneware in my Big Green Egg and my wife uses it a ton in her's too.

This is the "Family Classic's" line from Pampered Chef that we have used probably 30 times in the past 3 years in the Egg. We used it in the oven for probably 6 or so years before that. It is still sold by them:

She uses a Food Network branded bread loaf plan on her Egg:

She also has a Pampered Chef 4-mini-loaf stoneware, a Food Network square baker, and 2 pie stoneware pans.

The only item that has ever broken on our Eggs was a pie stoneware and that was 100% my fault because I poured cold liquid into it when it was hot. It made a nice distinctive "ping" and split in half.

So we've used a couple of brands with great success. Haven't tried your particular brand but in general they work fine on a fire cooker.

I think if you just take your favorite lasagna and fire roast it, it will be your "best ever" but my wife does make a great lasagna. Crap....now I want lasagna.

Most stoneware should be just fine the inside of your grill is just like an oven, a rack with heat coming from the bottom. As long as your heat in it does not exceed what the stone can handle it will be fine.

I have use a Pamper Chef loaf Pan to make bread on my Weber Kettle. It works quite well. I usually put it on the indirect side. The directions in came with says not to heat is past 500F and to bring it up with the temp of the oven.

I use to have two but I did break one. Not the grill but by fumbling it onto to the deck. I was pretty upset but the dog could not have been happier.

You can use any stoneware you want. You should be able to use pyrex as well. Cast iron and enameled cast iron are also excellent choices.
