I have several layers of grates. If I cook on 2 layers will the cook time be longer. I will be taking the internal temp of one. I have learned not to open the door but should I rotate the meat? Just would like to know if I should allow extra time. Thanks.

You may want to clarify what type of smoker you are using. WSM, UDS? You may get a better response. Currently I don't have either of those so I don't know if I can answer your question. I would imagine if one level of grates is closer to the fire you may need to rotate your meat between the levels if you want them done at the same time.

The cook time should be the same, aprox. 1 hour per pound at 250 for a sholder. Use the smaller of the two to monitor your internal temp and have the smaller one on the top rack, that way once you reach your target temp you can remove it without having the cooker opened too long. Try to avoid the temp spikes.
