Is it necessary to foil butts and briskets? Can you just get them up to temp, pull them and let them rest unfoiled? Thanks.

If you are going to put them into a cooler or Cambro/Carlisle to rest I would foil them. It will help them retain the heat.

I don't foil butts or briskets. I think it's more a personal prefrence. Some do some don't. I'm talking during the cook. I do foil to rest them.

You don't have to foil them but it will stay hot longer and trap more liquid if you do.

Are you saying that the main reason for foiling is to keep them warm?

We're talking about when they are resting, right? Then that is part of it. The other part is to hold in any liquid. Some of it will be pulled into the meat as the juices redistribute as it rests.
