Great sports weekend in Wisconsin! Brewers picked up a win today, the Badgers are battling the Cornhuskers and the Packers and Brewers are on tomorrow again. Seems like a great reason to eat and drink and fire up the King Pig UDS!
I put some sweet pepper ABTs on first. Cream Cheese, Butt Rub, a slice of Sweet Italian sausage, a piece of smoked gouda and some bacon. Wife does not like jalapeno's so these were a great stand in.
While I cooked those, I also had an extra piece of pizza dough I made so I sprinkled that with brown sugar and cinnamon. I microwaved some fresh cortland apples with some cinnamon and butter and rolled that into the dough. I wrapped that in foil and threw it on.
Once the ABT's were done and the apple concoction was off, I threw on a pizza crust. Once one side was done, I pulled that off, flipped it over and topped it with roasted red pepper, sweet Italian sausage, mushrooms, fontina cheese, smoked gouda, and mozzarella. Drizzled olive oil and balsamic over it when done.
Finally, I have a fatty on the smoker right now that I stuffed with the same general ingredients as was on the pizza. Sautéed onions, peppers, mushrooms, then cut up an Italian sausage and some smoked gouda and wrapped it in a bacon weave. This will be part of the brunch before the Packer game tomorrow, probably on egg sandwiches.
The plan is cut the apple bake up and serve it with ice cream and caramel at the half of the Badger game. Will try to get some pics. Enjoy!
