My spares have been in for 75 minutes around 260-275 F and I'm getting small white bubbles- well they're not bubbles, just opaque white little dots/domes. I can push them off with tongs.. I'm guessing it's some kind of rendered fat since they had a bit on them. Help?

As long as the ribs didn't smell extra funky when you put them on I wouldn't worry about it. I wouldn't wipe them off either. If it is just fat rendering then you're wiping away basting goodness.

I'll try to post pics but I think I'm alright. I didn't stick my nose in them but they didn't smell bad out of the vacuum pack.

I've seen that on meats before. I think it is water turning to steam and making bubbles of fat on the surface. Remember, if your ribs came in a cryovac, they have probably been "enhanced" 15 percent or more with water and salt.

CD, thanks for the advice. There was absolutely no liquid in them when I opened 'em up. Quite odd. Usually some blood, or brine, but none. :confused:

I would agree, though I would have started with the beer before even posting on this forum. Beer should always be your first line of defense.:laugh:

Not necessarily. All the spares I buy at Costco, local butcher & RD come cryo'd and none are enhanced. You need to read the package carefully and know what you're buying.
