How much do you folks trim up your beef ribs? I have been picking up beef short ribs, and some are very meaty with some intramuscular fat, there others have a thick fat cap on top.
So - do you trim like brisket or closer?

I tend to get them trimmed up pretty nicely (not on purpose, they come that way) but, on the occasion that it is there, I trim down to 1/8" or so.

I don't trim as the fat helps keep the meat moist over a 5-7 hour low/slow.

I try to get most of the hard thick stuff off when I do them.
