Picked up a 15.6 lb brisket at Sams friday and put it on at 2AM on Saturday. I did not reach 160 until 2 PM. at 6:30 it was a 189. I raised the heat from 210 to 240 and it finally was ready to come off at 7:30. It went into the cooler for 1 hour.

Results, pretty good, not my best. I think I will say away from 15lb+ briskets in the future. 13.5# seem about the right size.

I usually plan on 1.5 hours per pound for brisket. 17 hours seems a little quick for a 15.6#er.
