I wouldnt worry about the temp being that high that much my grill commonly climbs over that boston butt couple weeks ago, smoking it temp stayed around 300-325. So what was the difference? the butt was done in about 8 hours instead of 11, looked the same tasted the same and just as tender, but it saved some time. I have started smoking a little higher in this range lately and think it works just as well.
As far as heat control and adjusting the heat. Use the minion method, and use lump charcoal. Then when your temp is set and going adjust top vent to just a crack and leave, smoking your heat control can be done entirely with bottom vent.
