Smoked a pork shoulder today, learned a lot, and need to learn a LOT more! Using a Brinkman wsm,
lesson 1, keep an eye on the water level:doh:
Lesson 2, you CAN save it by putting it in the oven for an hour in a pan of water:clap2:
Lesson 3, replace the "warm, ideal, hot" thermometer that came with the smoker.

Lesson 4, figure a way to add water to pan WITHOUT losing the hair on my arm.:mad2:

Overall, the meat came out with good flavor, tender, and a little "bite" on the back end. Can't wait for next weekend to try something else.

Congrats, bro. The great part about this hobby is that there is always something new to learn. Apply your new knowledge next time and you will see great improvement and learn more at the same time.

That is awesome you will learn more and more and before long you wont even use that thermometer, you can tell by listening to the meat talk to you as to what it needs....
