View Full Version : Earthquake chicken - it will rock your world.

So after the earthquake hit yesterday - i was sent home because the building was closed until the fire department deemed it safe.

I saw this as a fantastic idea to smoke up some chicken thighs.

This was my first attempt at a competition style chicken and while my pics are ****ty - the food was fantastic.

Here is what I did...
Carefully removed the skin. Flipped it over and scrapped the fat off the skin. Took the chicken and deboned it. Hit it was Yardbird rub. Wrapped the chicken with the fatless skin and hit that with more Yardbird. Braised the chicken in a foil tray with 4 sticks of parkay for about 15-20 minutes. Started at 250 and raised it to 290.

Took the chicken out of the parkay, placed it directly on the grates at 290 for another 10 minutes. At this point, the chicken was at 145 deg.

Took the center of my WSM off and placed the grate directly over the coals to crisp up the skin. Did this for 3 minutes. HERE IS WHERE I SCREWED UP. I then flipped the chicken (skin side down) to get a nice grill mark and unfortunately the skins started to fall off. Next time I won't flip them.

After that, the chicken was at 170 - I took it inside and sauced with blues Hog and rapidly devoured 3 breast.

awesome and never heard of scraping the fat off or deboning. Is that the norm in comps because my last few bird attempts haven't turned out so well. Crap I 'm hijacking. :redface:

Nice looking Earthquake chicken.

When I got home after the quake I did a search for an earthquake cocktail and had one of them. 1 part Cognac and 1 part Pernod.

It stopped my shaking or at least I forgot I was shaking.

I made the same mistake Jaskew82 the one-and-only time I tried Competition Chicken. I haven't gone back to it since. lol
