Just got my new thermometer in the mail today, and now I'm about to go and set out to smoke my first Fatty. Here are some pics of the prep work. I wanted to add some things, but not get too carried away.

I'm getting my son into the whole process by being my photog man...he's 6 and it gives him a chance to participate.

I'll be back to post some more on the Fatty....:thumb:

Okay, I'm into the cook. I have some details that I'm going to post later, but I had to give out a quick update. I'm on my modded ECB. I had to close down all my vents and move the Fatty to the lower rack. I was getting temps around 290 at the top and it was still climbimg. Now, back on the bottom rack I'm at 250 (but has been rising to that point.) Everything is closed down and the only way it's truly getting a bunch of air is between the firepan and body.

Wait....there was the first temperature drop I've seen since I through the fatty on at 2:05. Hopefully, I didn't choke out the fire and it can settle in. It went to 248* and then now it's at 246* I'm using my new Maverick ET732 and so far, worth every penny...dang...back up to 250*

Joe Smoker - I wish they made ham that big, but it's 2...yowzza! :-D

Dang...back up to 257*..uggghhhhhh...but it's fun doing this stuff.
